Our free-range egg project works with small Samui farms who keep their hens outdoors, on real feed, with no hormones and no routine antibiotics. We agreed a fair price with the farmers and we hold it — so the money stays on the island and the birds stay out of cages.
The same goes for the greens, herbs and fruit we can get here. Anything grown on Samui gets shelf space before an import does, and it goes on the Lamphu Kitchen menu across the road.
